From the kitchen responsible for the renowned bean-to-bar chocolates made in collaboration with Portland’s Woodblock Chocolate and Serra’s top-selling Gumdrops, confectioner-in-chief Holly Hukill put the same artful consideration into each of these bite-sized delights.
“What started as a limited, special edition concept turned into an integral, PNW-inspired part of the Serra Confections line,” says Hukill. “Defined by flavors from partners Jacobsen Salt Co., Stumptown Coffee Roasters and Woodblock Chocolate, the Caramels celebrate Oregon’s culinary bounty.”
Unlike the five flavors of Gumdrops and the task of developing a gummy recipe from scratch, Hukill was really able to flex her culinary prowess in the more familiar territory of caramels. Working with Teresa Ulrich of the Serra Workshop, they concocted a recipe that doesn’t contain gluten, high-fructose corn syrup or artificial flavors/colors, while shining a spotlight on the flavors of Oregon.
Starting with a 1:1 Sea Salt Caramel, this classic recipe includes Jacobsen Salt Co.’s pure flake sea salt and Pruf Cultivar’s Strawberry Cough and East Fork Cultivars’ Canna Tsu CO2 oil. 5mg of THC and CBD in each caramel (10 caramels per box) offers a more full-bodied, robust high than 5mg THC alone.
The Stumptown Coffee Caramels contain the signature Hair Bender Blend coffee, delivering 5mg THC of sweet, stimulating sophistication with Pruf Cultivar’s G Krush. Woodblock Chocolate Caramels invoke the irresistible combination of chocolate and caramel, upgraded with Woodblock Chocolate’s 70% blend of cacao beans from Tanzania and Ecuador. The touch of THC in the 2:1 CBD-dominant recipe provides a pleasant lift without leaving you afraid of heights, thanks to 5mg CBD and 2.5mg THC per serving from Pruf Cultivar’s Astral Works distillate CO2 oil.
